After a year in the sunny South, Pierre Jancou is returning to Paris to open a new wine bar : VIVANT.

His new venture will be housed in a beautiful old shop in the 10th arondissement, and is due to open in late March 2011.

Sulphur dioxide is the most widely used and controversial additive in winemaking.

Most winemakers will tell you that it is not possible to make a great wine without it.
